Our Simple Meal Ideas

 

 

  

The following are some of the meals we eat that do not spike our bg numbers. These are not recipes, but they do show the main ingredients we use and they give the simple instructions we follow.

 

We enjoy visiting healthy low carb blogs which give the kinds of recipes most people prefer... you know... the kind with measurements and all. :) (Note: A post with web addresses for these blogs will be coming soon.)

 

By the way... we love (and many times prefer) to just eat raw vegetables with no frills and maybe a cup of plain yogurt or something, so any meal might be those! When it's warm outside our main meal will frequently be a nice salad but we do like to get in the kitchen and cook together, too, and the following are what we like to prepare and eat.

Veggie Crudités Ideas

 

These are a staple for us - washed and cut up vegetables kept in containers in our refrigerator, ready to be eaten.

 

They include bell pepper strips, broccoli florets, celery stalks, cucumber spears / rounds, and whole radishes. 

 

Occasionally they include some carrot sticks, cauliflower florets, green onions, olives, or tomatoes as well.

 

We like these best plain, but occasionally will have them with a dip, or a dressing, or a low carb salsa.

 

 

 

Cold Salad Ideas

 

Veggies Galore Salad  

 

Ingredients: tomatoes, cucumber, bell pepper, celery, radishes, avocado (or whatever combination of vegetables you like), and lettuce.

 

Instructions: Dice all vegetables (except the lettuce) and combine together. Heap them on a bed of chopped lettuce. 

 

Note: You can add fresh herbs or a dressing to the vegetables, if desired.

 

John's Guacamole Salad

 

Ingredients: avocados, tomatoes, a mini onion, shredded lettuce, garlic salt

 

Instructions: mash or dice avocados, add diced tomatoes, minced mini-onion, shredded lettuce. Mix all ingredients together, season with garlic salt to taste.

 

BLT Salad

 

Ingredients: lettuce chopped, tomato diced, cucumber peeled and diced, cooked bacon (or turkey bacon) in bite-sized pieces, cheddar cheese in tiny cubes.

 

Instructions: gently blend all ingredients together and top with a little Ranch dressing.

 

Note: For variety, instead of bacon use maple sausage bits or small pieces of cooked chicken.

 

Egg Salad

 

Ingredients: boiled and peeled eggs mashed, mayonnaise, dash of favorite mustard, black pepper.

 

Instructions: Put salad on a bed of lettuce leaves, or on a Wasa cracker, or use as a filling for celery or a large cored tomato

 

Note: You can add finely diced celery or bell pepper to your egg salad

 

Chicken Waldorf Salad

 

Ingredients: lots of diced celery, apple diced (we can use 1/4 to 1/2 an apple per person with no bg spikes), cheddar cheese in tiny cubes, small pieces of cooked chicken, mayonnaise

 

Instructions: combine all

 

Mexican Salad

 

Ingredients: lettuce chopped, tomato diced, olives sliced, seasoned browned hamburger (with low sodium taco seasoning), small cheddar cheese cubes

 

Instructions: combine all and top with low carb salsa

 

Chef Salad

 

Ingredients: lettuce chopped, tomato diced, ham julienned, cheese chunks julienned, boiled egg sliced

 

Instructions: combine all and top with Ranch dressing

 

Curry Chicken Jicama Salad

 

Ingredients: small pieces of cooked chicken, jicama peeled and sliced thinly, bell pepper julienned, curry spice, mayonnaise, and lettuce

 

Instructions: combine all ingredients (except lettuce) and heap onto a bed of shredded lettuce

 

Ham-Cuke-Mato Salad

 

Ingredients: (low sodium) ham / turkey ham diced, cucumber diced, tomato diced, mayonnaise or Ranch dressing

 

Instructions: combine all ingredients

 

Mustard Chicken Salad

 

Ingredients: small pieces of cooked chicken, favorite mustard, red and green bell peppers julienned, and lettuce

 

Instructions: combine all ingredients and heap onto a bed of torn lettuce

 

Tuna / Chicken / Ham Salad

 

Ingredients: canned tuna or chicken or low sodium ham / turkey ham diced, celery diced finely, mayonnaise, shredded lettuce

 

Instructions: combine all ingredients (except lettuce) and heap onto a bed of cut lettuce

 

Note: You can use the meat salad as a filling for celery or a large cored tomato, and you can put meat salad on a Wasa cracker

 

 

 

Warm Salad Ideas

 

Bratty Turnip Salad

 

Ingredients: all beef bratwurst grilled and sliced into bite-size chunks, turnips peeled, diced and boiled, carrots peeled, sliced and boiled, a mini onion minced, mayonnaise

 

Instructions: add all ingredients together and mix well

 

Turnato Salad

 

Ingredients: turnips peeled, diced and boiled, a mini onion minced, dill pickles chopped, mayonnaise, favorite mustard

 

Instructions: make just like you would potato salad

 

Grilled Vegetable Salad

 

Ingredients: assorted vegetables (i.e. sliced or whole tomatoes, zucchini squash sliced on the diagonal, bell peppers cut in large chunks, etc.), olive oil, salt, black pepper

 

Instructions: brush olive oil on all vegetables and grill, add salt and black pepper to taste, place in nice arrangement on plate

Meatloaf

 

Ingredients: hamburger, crushed Wasa crackers, eggs, tomato sauce, bell pepper chopped, mini onion minced, spices to taste

 

Instructions: combine all ingredients and shape into a loaf in a loaf pan, top with low carb ketchup, bake until done

 

Oven-Baked Chicken Parmesan

 

Ingredients: chicken breasts, parmesan cheese

 

Instructions: coat chicken breasts with grated parmesan cheese, bake until done

 

Stovetop Parmesan Chicken

 

Ingredients: chicken cut in small pieces, olive oil, grated parmesan cheese

 

Instructions: sauté chicken pieces in olive oil, sprinkle with grated parmesan cheese

 

Meatballs

 

Ingredients: hamburger, crushed Wasa crackers, eggs, spices to taste

 

Instructions: combine all ingredients, shape into meatballs, cook on stovetop or in oven until done

 

Note: eat plain or with a touch of spaghetti sauce, or a cream sauce made from heavy cream and cream cheese

Green Chilies Cream Cheese Scrambled Eggs

 

Ingredients: eggs, heavy cream, Hatch green chilies chopped, cream cheese

 

Instructions: stir together eggs and small amount of heavy cream, cook by scrambling in pan until done (more dry than wet is better), add drained chopped green chilies and several pats of cream cheese, mix just until cream cheese is incorporated slightly

 

Hard Boiled Eggs

 

Deviled Eggs

 

Ingredients: eggs, mayonnaise, favorite mustard, paprika

 

Instructions: boil eggs and peel them, cut eggs in half, remove cooked yolk to a separate bowl, mash yolks and add mayonnaise and mustard, fill empty egg whites with yolk mixture, sprinkle tops with paprika

 

Egg Salad

Sunny Side Up Eggs

 

Omelets

 

Ingredients: eggs, heavy cream, cooked ham in small chunks / bite size cooked sausage, shredded cheese

 

Instructions: stir together eggs and small amount of heavy cream, pour into pan and let cook on the bottom, add other ingredients (ham / sausage, cheese), when bottom is starting to brown slightly, gently flip one side of omelet over onto top of other, cook until done

 

 

 

Stovetop Dinner Ideas

 

Creamy Turmeric Beef Cabbage

 

Ingredients: hamburger, cabbage shredded, cream cheese, heavy cream, turmeric

 

Instructions: brown hamburger in large deep pan, drain most of the fat, add shredded cabbage and continually stir as cabbage cooks and reduces in size, when cabbage is done to consistency desired (we like it only slightly cooked) add cream cheese in chunks and heavy cream and turmeric, stir until cheese is almost melted

 

Sautéed Cabbage and Ham

 

Ingredients: cooked low sodium bacon / ham or turkey bacon / ham in bite-size pieces, olive oil, shredded cabbage, a mini onion minced, spices to taste

 

Instructions: sauté onion and bacon / ham in olive oil, add shredded cabbage and cook until cabbage is done to consistency desired, add spices to taste

 

Chicken Continental

 

Ingredients: bacon, chicken breasts cut in bite-size pieces, cream cheese, heavy cream

 

Instructions: cook bacon in pan, pour out most of the bacon grease, add chicken breast pieces and cook until done, add cream cheese chunks and heavy cream, stir until well coated

 

Note: You can serve this over a bed of torn lettuce or baby spinach

 

Creamy Beef Bells

 

Ingredients: hamburger, bell peppers cut in medium-size chunks, cream cheese, heavy cream

 

Instructions: brown hamburger, add bell pepper chunks and sauté until bells are cooked, add cream cheese chunks and heavy cream, mix until blended

 

Note: You can serve this with a nice side salad

 

Stovetop Chile Rellenos

 

Ingredients: whole roasted Hatch green chilies with tops chopped off, de-veined, de-seeded, slit down one side only, cheddar cheese in slices, eggs, heavy cream

 

Instructions: hide slices of cheddar cheese inside chilies and place in a frying pan coated with olive oil, cover with beaten eggs mixed with a little heavy cream, cook until egg mixture is done and cheese inside chilies is melted

 

Pan Roasted Bells, Onions, Zucchini

 

Ingredients: bell peppers cut into larger bite-size chunks, onions cut into thin rings, zucchini cut into rounds, olive oil

 

Instructions: cook all vegetables in olive oil in large pan letting them roast / brown well

 

Green Chile Stew

 

Ingredients: beef stew meat, turnips peeled and diced, carrots peeled and sliced, water, beef bouillon, Hatch green chilies chopped

 

Instructions: brown beef in deep pan on stop top and drain well, add diced turnips, carrots, water to soup level, and beef bouillon, cook until turnips and carrots are tender, add chopped Hatch green chilies and stir and serve

 

Build a Mountain

 

Ingredients: For the 'base' prepare shredded lettuce - for the 'foothills' prepare an assortment of meats like taco seasoned browned hamburger, seasoned fajita meat, Mesquite chicken tenders, etc. all cooked - for the slopes prepare assorted vegetables like tomatoes diced, sautéed bell pepper chunks, olives sliced, cucumbers diced, etc. - for the peak or summit prepare shredded cheese, sour cream dollops, guacamole, or salsa, etc.

 

Instructions: Each person builds their own 'mountain' of food from what has been prepared.

 

Fajitas

 

Ingredients: low carb tortillas, seasoned cooked fajita meat, shredded lettuce, tomatoes diced, olives sliced, green chilies chopped, sour cream, cheddar cheese shredded

 

Instructions: warm tortillas and fill with any or all of the above desired ingredients

 

 

 

Crock Pot Dinner Ideas

 

Crock Pot Pot Roast

 

Ingredients: pot roast, celery cut in chunks, turnips peeled and diced, carrots peeled and sliced

 

Instructions: put celery, turnips, and carrots in bottom of crock pot, add water to just below vegetables, lay pot roast (cut into medium-size chunks) on top of vegetables and cook

 

Note: an hour before done we switch the meat to the bottom of the crock pot

 

Crock Pot Green Chilies Stew

 

Ingredients: stew meat, turnips peeled and diced, Hatch green chilies chopped, beef bouillon

 

Instructions: put turnips on bottom of crock pot, add water to cover them, brown stew meat on stove top and then add to crock pot, pour chopped Hatch green chilies over meat and turnips and cook

 

 

 

Homemade Soup Ideas

 

Cabbage Stew

 

Ingredients: cabbage chopped, a small onion minced, ham or turkey ham or hamburger or stew meat, Italian seasoning, garlic salt, water

 

Instructions: brown ham or meat in large pan, add minced onion and cabbage and seasonings, add water to soup level, bring to a boil and cook until cabbage is tender

 

Savory Beef Turnip Soup

 

Ingredients: beef stew meat, olive oil, turnips peeled and diced, small onion minced, carrots peeled and sliced, celery diced, water, beef bouillon, sweet basil, 2 pats of butter

 

Instructions: brown beef stew meat in olive oil in large pan, add turnips, carrots, celery, bouillon, and sweet basil to taste, add water to soup level, cook until meat is done and vegetables are tender, add pats of butter and stir and serve

 

Broccoli Cheese Soup

 

Ingredients: broccoli florets, mini onion minced, olive oil, water, chicken bouillon, cheddar cheese shredded, black pepper, heavy cream

 

Instructions: lightly sauté broccoli florets and minced onion in olive oil in large pan until slightly cooked, add water to soup level, add chicken bouillon, shredded cheese and black pepper, cook until broccoli is cooked, add heavy cream to thicken and flavor

 

Chicken Soup

 

Ingredients: chicken breast cut in bite-size pieces, olive oil, turnips peeled and diced, carrots peeled and sliced, celery diced, mini onion minced, water, chicken stock or bouillon, black pepper, bay leaf

 

Instructions: cook chicken pieces in olive oil until done, add turnips, carrots, celery, onion, and water to soup level, add chicken stock or bouillon, black pepper and bay leaf and cook until vegetables are tender

 

Creamy Celery Soup

 

Ingredients: a lot of celery diced fine, mini onion minced, olive oil, chicken stock or bouillon, salt, black pepper, water, heavy cream

 

Instructions: sauté finely diced celery and onion in olive oil just until slightly tender, add water to soup level, bouillon, salt, and black pepper, cook until celery is tender, add heavy cream

 

Note: if desired blend in a blender until smooth

 

Spaghetti Soup

 

Ingredients: spaghetti squash baked and shredded, bell peppers in bite-size julienned pieces, olive oil, spaghetti sauce, cheddar cheese shredded, water, black pepper

 

Instructions: bake the spaghetti squash (as per instructions found in cookbooks or on the internet), shred the spaghetti squash to resemble spaghetti, sauté bite size julienned bell peppers in olive oil, to the bell peppers add the shredded spaghetti squash, spaghetti sauce, black pepper to taste, and water to soup level, bring to a simmer and add cheese last few minutes, simmer until cheese is melted

 

 

 

Oven Dinner Ideas

 

Three-Cheese Quiche

 

Ingredients: eggs, 2 cheeses shredded (i.e. Swiss and cheddar), parmesan cheese grated, heavy cream, spices, additional things (see below)

 

Instructions: blend 2 shredded cheeses and grated parmesan cheese, heavy cream, egg yolks, spices, and egg whites that have been whipped separately until forming stiff peaks, bake in lightly greased casserole dish

 

Note: you can line the bottom of the quiche with crushed Wasa crackers and melted butter

 

Note: You can add additional things like chopped olives, green chilies, mushrooms, etc.

 

Chile Rellenos Casserole

 

Ingredients: Hatch whole green chilies with top cut off, de-veined and de-seeded, cheddar or Monterey Jack cheese shredded, eggs beaten, heavy cream

 

Instructions: beat eggs and blend with a little heavy cream, pour 1/3 of mixture into lightly greased 9x12 casserole dish, layer opened and flattened Hatch whole chilies with 2/3 of the shredded cheese to the top of dish (should make 2 or 3 layers of each), cover everything with remaining eggs and top with the remainder of cheese, bake until eggs are set and cheese is melted

 

Pepper Beef Bake

 

Ingredients: bell peppers cut into medium-size chunks, hamburger, spaghetti sauce, parmesan cheese grated

 

Instructions: brown the hamburger and drain almost all of the grease off, add the bell peppers to the hamburger and sauté until bells are slightly soft, add spaghetti sauce and put everything into a casserole dish, top with parmesan cheese and bake until peppers are desired consistency and parmesan is lightly browned

 

Spaghetti and Meatballs

 

Ingredients: spaghetti squash baked and shredded (as per instructions in a cookbook or found on the internet), Italian meatballs cooked, spaghetti sauce, bell peppers chopped in small pieces, a mini onion chopped in small pieces, olive oil

 

Instructions: sauté bell peppers and onions in a little olive oil until tender, add spaghetti sauce and Italian meatballs to them and bring to a simmer, pour over baked spaghetti squash that has been shredded

 

Spaghetti Squash with Alfredo Sauce

 

Ingredients: spaghetti squash baked and shredded (as per instructions in a cookbook or found on the internet), heavy cream, parmesan cheese finely grated

 

Instructions: make Alfredo sauce by combining the heavy cream and parmesan cheese and cooking in a pan until slightly thickened, pour over baked spaghetti squash that has been shredded

 

Stuffed Cabbage

 

Ingredients: cabbage leaves, hamburger, a mini onion minced, crushed Wasa crackers, spaghetti sauce

 

Instructions: brown hamburger and drain well, briefly cook minced onion in browned hamburger to soften, take off stovetop and add crushed Wasa crackers and enough spaghetti sauce to help ingredients stick together, fill center of  cabbage leaves with hamburger mixture and roll the leaves up tucking ends underneath, place all the rolled and filled cabbage leaves with tucked side down in lightly greased casserole dish, pour remaining spaghetti sauce over top, bake until done

 

Cheesy Stuffed Bells

 

Ingredients: bell peppers with tops cut off, cored, and deseeded and de-veined, hamburger, a mini onion minced, crushed Wasa crackers, spaghetti sauce, very small cheddar cheese cubes

 

Instructions: brown hamburger and drain well, briefly cook minced onion in browned hamburger to soften, take off stovetop and add crushed Wasa crackers and enough spaghetti sauce to help ingredients stick together, fold in small cheddar cheese cubes, fill center of cored bells with mixture, pour remaining spaghetti sauce over top, bake until bell peppers are tender

 

 

 

Sauce Ideas

 

Alfredo sauce, Parmesan sauce, Cream sauce, Cheese sauce, Ranch Dressing, Vinegar and Olive Oil / Vinaigrette, Tomato / Red sauce / Spaghetti sauce, Chipotle dressing, Soy sauce (low sodium), Steak sauce

 

 

 

Cold Vegetable Ideas

 

Healthy Coleslaw

 

Ingredients: cabbage shredded, carrot shredded, a mini onion minced, mayonnaise, black pepper

 

Instructions: mix all ingredients well and chill

 

Dilled Veggies

 

Ingredients: chopped and sliced vegetables (peeled as appropriate) (cucumbers, tomatoes, zucchini, etc.), sour cream, mayonnaise, fresh or dried dill

 

Instructions: blend all ingredients together

 

Guacamole

 

Ingredients: avocados, tomatoes chopped in small pieces, a mini onion minced, garlic salt

 

Instructions: mash avocados, add tomatoes and onion and garlic salt to taste

 

Lettuce Drizzle

 

Ingredients: 1/4 head of iceberg lettuce or plate full of torn lettuce, favorite low carb dressing or melted cheese or low carb salsa

 

Instructions: place lettuce on plate and drizzle with desired topping

 

Marinated Veggies

 

Ingredients: misc. vegetables prepared - tomato wedges or large slices, cucumber rounds or sticks, bell pepper strips, whole or sliced radishes, etc., favorite low carb dressing

 

Instructions: marinate vegetables with low carb dressing

 

Veggies and Dip

 

Ingredients: vegetable crudités (all cut into manageable strips and pieces) - bell pepper strips, whole radishes, broccoli florets, carrot sticks, cucumber spears or rounds, zucchini squash slants, cauliflower florets, tomatoes (Roma, cherry, grape), green onions, dip of choice

 

Instructions: prepare a platter of nicely arranged vegetable crudités, prepare a dip of your choice in which to dip vegetables (as finger foods)

 

Note: our favorite dip is a cream cheese Ranch

 

 

 

Warm Vegetable Ideas

 

Pan Roasted Bells

 

Ingredients: bell peppers cut in large pieces, olive oil

 

Instructions: 'roast' bell peppers in olive oil in pan, let them brown well

 

Note: You can add an onion cut into rings and 'roast' them with the bell peppers

 

Parmesan Creamed Broccoli

 

Ingredients: broccoli florets, olive oil, parmesan cheese grated, heavy cream

 

Instructions: sauté broccoli lightly in olive oil in pan, when tender add parmesan cheese and heavy cream, cook just a moment until sauce thickens

 

Cabbage Cheese Drizzle

 

Ingredients: cabbage quartered, favorite cheese

 

Instructions: boil the cabbage quarters in water until tender, carefully lift quartered cabbage out of pan and place on a plate, drizzle melted cheese over the top

 

Sautéed Celery in Cream Sauce

 

Ingredients: celery cut into chunks, olive oil, heavy cream, spices

 

Instructions: sauté cut celery in olive oil in pan until tender, add heavy cream and spices, cook just a moment until sauce thickens

 

Green Chilies Veggie Sauté

 

Ingredients: assorted vegetables cut in bite-sized pieces - bell peppers, celery, broccoli, tomatoes, etc., olive oil, Hatch green chilies chopped

 

Instructions: sauté vegetables in olive oil in pan, add green chilies and cook until chilies are warm

 

Crispy Fried Eggplant

 

Ingredients: eggplant sliced into thin rounds and salted and covered with weight on top for 1/2 hour, eggplant liquid drained and slices blotted very dry, olive oil, spices

 

Instructions: sauté eggplant in very small amount of olive oil in stovetop pan until brown and crisp, add spices to taste

 

Pico De Gallo Mushrooms

 

Ingredients: mushrooms, butter, low carb salsa

 

Instructions: sauté mushrooms in butter, add low carb salsa and cook until warmed through

 

Green Beans and Maple Sausage

 

Ingredients: green beans cooked, maple sausage cut into small pieces

 

Instructions: combine cooked green beans with cooked maple sausage along with a little of the grease, blend well

 

Mashed Caulitatoes

 

Ingredients: cauliflower florets, butter, heavy cream, salt and pepper

 

Instructions: cook cauliflower florets until tender, pulse in blender to desired consistency to match mashed potatoes, blend in butter and heavy cream

 

Note: You can use turnips in place of the cauliflower and mash them just like potatoes, add the butter and heavy cream

 

Pan Fried Zucchini

 

Ingredients: zucchini squash cut in slices diagonally, olive oil, parmesan cheese grated

 

Instructions: brown the zucchini slices in a little olive oil, sprinkle on parmesan cheese and serve

 

 

 

Oven Vegetable Ideas

  

Celery Chips

 

Ingredients: celery root (celeriac) peeled and thinly sliced, olive oil, spices

 

Instructions: dip celery root (celeriac) slices in olive oil blended with spices, place on cookie sheet and bake until crisp (will look like chips)

 

Eggplant Croutons

 

Ingredients: eggplant cut in small cubes, salted and drained well for half an hour and blotted very dry, olive oil, Italian seasoning

 

Instructions: brush eggplant cubes with mixture of olive oil and Italian seasoning, place on cookie sheet and bake until they are crisp

 

Stuffed Portabella Mushroom Caps

 

Ingredients: Portabella mushroom caps, olive oil, cream cheese, shredded cheese of choice, parmesan cheese grated, spices

 

Instructions: gently wash top of caps with wet paper towel, gently remove gills from underside of mushrooms, lightly grease tops of mushrooms with a touch of olive oil, fill mushroom caps (turned upside down on cookie sheet) with mixture of cream cheese and other cheeses, bake until mushroom is cooked and cheese is melted and browned

 

Bacon Wrapped Cream Cheese Jalapeno Poppers

 

Ingredients: jalapeno peppers with tops cut off, carefully deseeded and de-veined (use gloves!), cream cheese, raw thick bacon

 

Instructions: cut prepared jalapeno peppers in half lengthwise, carefully fill with cream cheese, wrap each one with a raw thick slice of bacon wrapping from end to end being sure to cover cut end of cheese stuffed pepper (so cheese will not escape when baking), place on lightly greased cookie sheet with loose ends of bacon on underside - cheese side of peppers up, bake until jalapenos are done and bacon is cooked

 

Note: Use gloves to protect your hands when working with jalapenos, and be very careful to never touch your face during the preparation process

lunchmeat, meat salad (chicken, turkey, beef, tuna), egg salad, cream cheese, cheese slices, melted cheese, peanut butter, pepperoni slices and spaghetti sauce, guacamole, guacamole and cream cheese smear (avocado and cream cheese)

 

Lettuce Wraps

 

fill lettuce leaves with one item or a combination of items:

 

lunchmeat, meat salads, taco beef, etc.

 

Cabbage Ham Wraps

 

fill slightly cooked or uncooked cabbage leaves with ham slices, mayonnaise, favorite mustard

  

Lunchmeat Wrap / Meat Roll

 

wrap a thick slice of lunchmeat around one or more item:

 

string cheese, cheese slices, vegetable (cucumber spear, tomato wedge, broccoli florets, etc.), pepperoni

 

Cold Quiche Squares

 

bake a quiche and cut into squares to make 'sandwiches'

 

Tortilla Melts

 

fill low carb tortillas with cheese slices, cook to melt cheese inside (in microwave or oven)

 

Note: You can make these into quesadillas by grilling them in a little olive oil or butter in a pan on the stove top

  

Low Carb Burritos
